Dry Rub for Ribs

Buccaneer Baby Back Ribs with Pineapple Barbecue Sauce recipe from Steven Raichlen Episode 302 Barbe

Ingredients:

For the rub:
2 tablespoons coarse salt (kosher or sea)
2 tablespoons light brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon granulated garlic
1 teaspoon onion powder
1 teaspoon ground allspice
1 teaspoon chili powder or paprika
1/2 teaspoon ground cinnamon

For the pineapple spray:
2 cups pineapple juice
1/2 cup rum
2 tablespoons Worcestershire sauce


Directions:

Make the rub: Place the ingredients in a small bowl and mix with your fingers, breaking up any lumps.
